YUM! Just ate my squash - roasted for 40 minutes at 450, "shredded" with a fork, and topped with sauce. I wanted more than just an internet recipe for reference, so I asked my participants in my 6am aerobics class, seeing as they are my captive audience for an hour - ah ha! The consensus was definitely to roast the squash. So roast I did, and good it was!
Here's the embarrasing part: I get home, turn on the oven, grab my squash, and remove the produce sticker...wait, what is this? writing on the sticker? directions for HOW TO COOK AND SERVE THE SQUASH!!!! Duh, Jen! Funny on a day when I have just spoken with my students about how important it is to read and follow directions :)

Have you ever had butternut squash? It is the best when you roast it for about an hour and smother it in butter and brown sugar. Not very diet conscious, but very delicious.
